Salsa Para Espagueti/Spaghetti Sauce

¼ aceite de oliva
½ taza mantequilla
1 taza cebolla picada
400 gramos carne molida
100 gramos tocino picado
2 dientes de ajo finamente picados
1 cucharadita de sal
3 cucharadas perejil fresco, picado
½ cucharada de pimentón molido
2 copitas de vino tinto
1 taza salsa de tomate
2 cucharadas de pulpa de tomate
2 tallos de apio picado
1 zanahoria picada
Pimienta al gusto

Se calienta el aceite a fuego lento, se le agrega la mantequilla y se deja en el fuego, hasta que se derrite bien. Se dora ahí la cebolla y se agregan la carne y el tocino, moviéndolos de vez en cuando hasta que quedan bien fritos. Luego se agrega el ajo, el perejil, la sal, la pimienta y el pimentón, dejándolos en el fuego cuando menos 10 minutos. Se agrega el vino, se tapa la cacerola y se deja vaporizar unos minutos. Entonces se agregan los tomates (todos) calentando hasta la ebullición y añadiendo entonces el apio y la zanahoria. Se tapa y se cuece a fuego lento por una hora. Se le puede agregar salsa inglesa, vinagre y picante.

Spaghetti Sauce
¼ c. olive oil
½ c. butter
1 c. chopped oinion
1 lb. ground beef
3½ oz. chopped bacon
2 cloves of garlic, finely chopped
1 t. salt
3 T. chopped fresh parsley
½ T. paprika
½ c. red wine
1 c. tomato sauce
2 T. tomato paste
2 celery stalks, chopped
1 carrot, chopped
Pepper to taste

Heat oil on low, add butterand let melt. Fry onion lightly and then add the beef and bacon, stirring often, meat is browned. Add garlic, parsely, salt, ground pepper and paprika, letting them cook for about ten minutes. Add the sherry and cover with a lid, letting it simmer for a few minutes. Add the tomato sauce and paste. Bring to a boil, then add celery and carrot. Cover and cook for an hour on low heat. You may add Worcestershire sauce, vinegar and hot sauce.
