Arroz a la Jardinera/Garden Style Rice

50 gramos de margarina
2 dientes de ajo
1 cebolla chica, finamente picada
200 gramos arroz, limpio y seco
1 zanahoria grande rallada
1 litro de caldo o de agua
2 chiles serranos, si se desea
Sal y pimienta al gusto
½ taza de chicharos cocidos
1 chile poblano chico, tostado y limpio

Garden Style Rice
Se derrite la margarina a fuego lento cuidando que no se queme; se acitrona el ajo y la cebolla. Se añade el arroz, friéndose ligeramente. Luego se agregan la zanahoria. Cuando esta brillante, se añade el caldo, los chiles serranos enteros, sal y pimienta. Se deja hervir hasta que se consuma el líquido. Al secarse se le ponen los chicharos y encima rajas del chile poblano.

Garden Style Rice
4 T. butter
2 garlic cloves
1 small onion, finely chopped
1 c. rice
1 large carrot, shredded
4 c. chicken stock or water
2 serranos chiles
Salt and pepper, to taste
½ c. green peas
1 small poblano chile, roasted, cleaned and cut into strips
Melt butter on low heat, being careful not to burn it. Fry onion and garlic lightly. Add rice and fry until translucent. Add carrots. When it turns a bright color, add stock, whole serrano chiles, salt and pepper. Let it boil until liquid evaporates. Add the green peas and place the strips of poblano chiles on top.
