Arroz con Camarones/Rice with Shrimp

Camarones en Salsa: En una cacerola gruesa se fríe con mantequilla o aceite; cebolla, perejil, chile poblano y jitomate todo finamente picado, se le agregan los camarones frescos, pelados y limpios y se le pone la sal y la pimienta al gusto, se cocina por unos minutos, solo hasta que el camaron cambien de color.
Arroz: Aparte, se dora en manteca de tocino, si es posible, el arroz con un ajo. Cuando el arroz esta color beige, se saca el ajo y se tira, se le pone el agua fría a que cubra el arroz y cuando reseca, se le agrega agua caliente, se sazona de sal, se tapa y se la baja el fuego al mínimo a que se cosa a vapor. Se sirve el arroz a un lado del plato y la salsa de camarones al otro lado.

Rice with Shrimp
Shrimp in Salsa: In a heavy bottom skillet, fry in oil or butter; onion, parsley, poblano chile and a tomato, all chopped finely. Add fresh, peeled and cleaned shrimp. Add salt and pepper to taste, let it cook for a few minutes, just until shrimp changes color. Set aside.
Rice: In a seperate pan, in bacon fat, if possible, fry rice and one garlic clove. When the rice turns beige in color, take out the garlic and discard. Add cold water to cover rice and when liquid evaporates, add hot water, season with salt, cover with a lid and lower fire to lowest setting and let it cook. Serve rice on one side of the plate and the shrimp-salsa, on the other side of the plate.
