Pastel Crema de Queso/Cheesecake

1½ taza crema de leche (sour cream)
½ taza yogurt, natural, sin sabor
¾ taza de azucar
2 huevos
1 cucharadita de vainilla
1½ paquetes de queso crema (12 oz. cream cheese)
2 cucharadas crema ligera (whipping cream)

Se combinana y se baten todos los ingredientes juntos. Se ponen en molde (10 pulgadas) de pie cocinado y se meten al horno a 350 grados por 40 a 50 minutos. Una vez frio se colocan en el refrigerador. Delicioso.

Cheesecake
1½ c. sour cream
½ c. plain yogurt
¾ c. sugar
2 eggs
1½ pkg. cream cheese (12 oz.)
1 t. vanilla
2 T. whipping cream

Combine all ingredients and beat until smooth. Pour into a large prepared pie crust (graham, cornflakes or similar) and bake at 350 degrees for 40 to 50 minutes. Once cooled, place in refrigerator.

Galletas de Chabacano/Apricot Cookies

2 ½ tazas de harina cernida
3 yemas de huevo
½ taza de azúcar
2 cucharaditas de vainilla
1 taza de mantequilla
Agua la que se necesite
1 hoja de papel encerado
½ taza de azúcar en polvo, cernida

Horno precalentado a 375 grados. Se forma un circulo con la harina poniéndole en el centro las yemas, el azúcar, la vainilla y la mantequilla. Se revuelve todo perfectamente bien, añadiéndole agua poco a poco, hasta que la masa ya no se pegue ni a las manos ni a la mesa. Se envuelve la masa en una hoja de papel encerado y se mete al refrigerador por 15 minutos. Se extiende la pasta dejándola de ½ centímetro de grueso, se cortan las galletas con cortador redondo de 10 centímetros de diámetro. A la mitad de las galletas se les corta una ruedita en medio a que quede cómo un anillo. Se hornean por 10 a 12 minutos. Ya frías, se les pone una cucharadita de chabacano a las galletas completas y se tapan con las que tienen el huequito. Se espolvorea cada galleta con azúcar pulverizada.


Apricot Cookies
2 ½ c. flour, sifted
3 egg yolks
½ c. sugar
2 t. vanilla
1 c. butter
Water as needed
1 sheet of waxed paper or plastic wrap
½ c. powdered sugar, sifted

Preheat oven at 375 degrees. Form a circle with the flour and in the center, place egg yolks, sugar, vanilla and butter. Mix everything well, then add water, a little bit at a time, until dough is no longer sticky. Wrap dough in waxed paper or plastic wrap, and place in refrigerator for 15 minutes. Roll out to ¼-inch thicknes and cut with cookie cutter about 3-inches in diameter. On half of the cookies, make a small hole in the middle, with the smallest cookie cutter about an inch in diameter, as to make a ring. Bake them for 10 to 12 minutes. Once cooled, place a tablespoon of apricot jam and cover with cookies rings. Dust each cookie with powdered sugar.

Galletas de Cacahuate/Peanut Butter Cookies

4 tazas de harina
2 tazas de azúcar
1 taza de manteca
1 taza de cacahuate molido

Se cierne la harina; se revuelve con el azúcar y el cacahuate; se le agrega la manteca requemada y fría; se une todo revolviendo muy bien para que quede una masa seca. Se hace un rollo que se mete al refrigerador hasta que este bien frío; se corta en rueditas y se mete al horno precalentado a 375 grados por 10 a 12 minutos.

Peanut Butter Cookies
4 c. flour
2 c. sugar
1 c. shortening
1 c. peanut butter

Sift flour; beat sugar and peanut butter; add melted and cooled shortening; mix everything together. Make a roll (with plastic wrap) and place in refrigerator until it is cold. Cut into slices and bake in a preheated oven at 375 degrees for 10 to 12 minutes

Panuchos

2 tomates
2 cebollas regulares, picadas y separadas
3 chiles serranos
10 tortillas
1 taza de frijol refrito
¼ kilo carne de puerco, cocida y deshebrada
100 gramos de queso añejo

Se prepara la salsa: En un poco de grasa se fríen los tomates molidos con una cebolla picada, y los chiles asados y picados; se sazona con sal y se deja a fuego lento hasta que espese.
Las tortillas se untan con los frijoles refritos, se untan de dos en dos, pero antes se les pone un a poca de carne deshebrada. Se prenden con palillos y se fríen en manteca bien caliente, cuando están doradas se retiran, se les pone un poco de salsa, cebolla picada y queso rallado.

Panuchos
2 tomatoes, roasted, peeled and ground
2 onions, chopped and seperated
3 serrano chiles, roasted and chopped
10 corn tortillas
1 c. refried beans
1/2 lb. cooked and shredded pork
4 oz. queso añejo or Parmesan cheese

Prepare sauce: In a small amount of oil, fry the tomatoes with one chopped onion and the serrano chiles; season with salt and let it simmer until thickened. On one tortilla, spread some beans and some shredded pork, top with another tortilla and place toothpicks around so as to seal, fry in hot oil until golden brown on both sides. Place on a plate, remove toothpicks and top with some of the sauce, some chopped onions and some cheese. Repeat for each serving.
Recipe is for 5 servings

Enchiladas de Pollo/Chicken Enchiladas

1 cucharada de aceite
3 cebollitas verdes, picadas
1 diente de ajo picado
1 lata de crema de pollo
1 lata de 4 onzas de chiles verdes picados
1 taza de agua
2 tazas de queso mozzarella, rallado
1 taza de pollo cocido y picado
8 tortillas de maíz grandes
¼ de taza o más de aceite para freír las tortillas
Crema agria

Freír cebollitas y ajo ligeramente en el aceite. Se agrega la crema de pollo, chiles, y el agua. Se unta dos cucharadas de esto en un molde para hornear de 9x13 pulagadas. Aparte, se mezcla la mitad de la mezcla de sopa con chiles, 1 taza de queso y el pollo. Se fríen las tortillas a que suavicen, se enrollan con 2 cucharadas de la mezcla que se hizo de sopa de pollo, queso y pollo. Se colocan en el molde y encima se le pone el restante de la sopa con chiles y la taza restante del queso. Se hornea a 350 grados por 25 minutos. Se sirve caliente con un poco de crema agria.

Chicken Enchiladas
1 T. oil
3 green onions, chopped
1 garlic clove, minced
1 can cream of chicken
1 4 oz. can of green chiles, diced
1 c. water
2 c. mozzarella, shredded
1 c. cooked chicken, diced
8 large corn tortillas
¼ c. or more oil for frying tortillas
Sour cream

Fry onions and garlic in oil, lightly. Add cream of chicken, chiles and water. Spread 2 T. on bottom of 9x13-inch baking pan. In a bowl combine ½ of chicken-chiles mixture, 1 c. cheese and chicken. Soften tortillas in hot oil. Place 2 T. chicken mixture in each tortilla, roll and place in prepared pan. Pour in remaining chicken mixture and the remaining cheese on top . Bake for 25 minutes at 350 degrees. Serve warm topped with some sour cream.

Rollo De Carne/Meat Roll

½ kilo (1 lb.) carne de res molida
¼ kilo (½ lb.) carne de puerco molida
1 ½ tazas de migas de pan
1 taza de leche evaporada
2 huevos, uno crudo y uno cocido
1 diente de ajo, finamente picado
1 cebolla mediana, finamente picada
½ taza de aceitunas rellenas
1 ramita de perejil
Sal y pimienta al gusto
Papel encerado

Se mezclan las carnes con las migas de pan, la leche evaporada, un huevo crudo, sal, pimienta, la cebolla y el ajo. Se extiende la mezcla en forma de rectángulo, de un centímetro de espesor, sobre el papel encerado, se le pone encima las aceitunas, un huevo cocido y el perejil, todo picado y se forma un rollo levantando el papel para ayudarse. Se coloca el rollo (sin papel) en un platón refractario bien engrasado y se mete al horno a 350 grados durante una hora. Se sirve adornando con ramitos de perejil.

Meat Roll
1 lb. ground beef
½ lb ground pork
1½ c. bread crumbs
1 c. evaporated milk
½ c. stuffed olives
2 eggs, one boiled
1 garlic clove, minced
1 medium onion finely chopped
1 sprig of parsley
Salt and pepper to taste
Waxed paper or parchment paper
Mix the meats with bread crumbs, evaporated milk, one raw egg, salt, pepper, onion and garlic. Spread the mixture in the shape of a rectangle, and about 3/8 of an inch thick, over waxed paper, place a layer of; olives, boiled egg and parsley, all finely chopped. Roll up using paper to help. Place roll (without waxed paper) in a greased baking dish and bake at 350 degrees for one hour. Serve and garnish with parsley.

Sopa de Albóndigas/Meat Ball Soup

1 cebolla picada
1 ajo picado finamente
2 cucharadas de aceite
½ lata de salsa de tomate
¾ gallón de caldo de res (12 tazas)
1½ lb. de carne molida de res
½ taza de arroz crudo
1½ cucharadita de sal
¼ cucharadita de pimienta molida
1 huevo
1 cucharada de hierbabuena picadita

En una olla grande, se fríe la cebolla y el ajo en el aceite a que suavicen; se le agrega la salsa de tomate y el caldo de res y se deja que hierva. Se baja el fuego. Aparte, se revuelve bien la carne molida, el arroz, sal, pimienta, el huevo y hierbabuena. Se forman bolitas y se colocan en el caldo, se dejan cocer por 30 minutos.
Opcional: Se puede agregar zanahoria y/o calabacita picada al caldo.

Meat Ball Soup
1 onion, chopped
1 garlic, minced
2 T. oil
½ can tomato sauce
¾ gallon beef broth (12 cups)
1½ lb. ground beef
1/2 c. rice
1½ salt
¼ ground pepper
1 egg
1 t. minced mint

In a large stock pot, heat oil and fry onion and garlic until tender; add tomato sauce and broth, and let it boil. Lower heat. In the meantime, in a bowl combine meat, rice, salt, pepper, egg and mint. Mix well and make meat balls and place them in pot with broth. Cook for 30 minutes.
Optional: May add chopped carrots and/or diced zucchini to broth.

Budín Indio/Indian Tortilla Ring

24 tortillas
6 chiles anchos
50 gramos manteca
3 chorizos
115 gramos queso
3 cebollas picadas
2 dientes de ajo, finamente picados
¼ cucharadita comino
115 gramos chícharos cocidos
3 huevos
2 cucharadas de pan molido
50 gramos mantequilla
Una lechuga
6 chiles jalapeños en vinagre

En la manteca se fríen los chorizos, se retiran y esa grasa se fríen los chile que previamente estarán asados ligeramente, desvenados, remojados con agua caliente y molidos con su misma agua, el ajo, la cebolla y el comino; se deja freír perfectamente a que espese un poco y se retira del fuego. En una budinera engrasada se van colocando una capa de tortilla remojada en chile, otra de chícharos cocidos, otra de queso rallado, de chorizo frito, de cebolla picada y de huevo batido. Se colocan en esta forma las capas siendo la ultima de huevo, pan molido y trocitos de mantequilla, se mete al horno a que dore. Se vierte sobre hojas de lechuga y se adorna con tiras de los chiles jalapeños en vinagre.

Indian Tortilla Ring
For sauce:
¼ c. oil (or lard)
6 oz. chorizo
6 ancho chilies, roasted, deveined, soaked in hot water and processed in blender.
2 garlic cloves, minced
1 onion, chopped
¼ t. cumin
For Budnt:
24 corn tortillas
1 c. green peas
8 oz. grated Jack cheese
2 onions, chopped
3 eggs
2 T. bread crumbs
¼ c. butter
1 lettuce
6 jalapeños pickled in vinager

For sauce: Fry chorizo in oil and after it’s done, take it out of oil with slotted spoon and set aside. In this oil, fry the ancho chile paste, add garlic, one onion chopped and the cumin; let it simmer until it thickens. In a buttered bundt pan, place a layer of tortillas dipped in the hot sauce, a layer of green peas, cheese, the fried chorizo, chopped onion and some beaten egg. Repeat layers ending with egg, sprinkle bread crumbs and small pieces of butter on top. Bake at 350 degrees for 30 minutes or until brown on top. Turn over on a bed of lettuce leaves and garnish with jalapeños strips.

Pudín de Salmón Con Papas/Salmon &Potatoes Casserole

½ libra salmón ahumado, cortado en pedacitos muy delgado
375 gramos papas crudas, sin cáscara y cortadas finamente
3 huevos
2 tazas de leche
2 cebollas grande, cortadas en tajaditas delgada
Pimienta al gusto

Se pone el salmón en la leche fría durante 4 horas. En un molde refractario untado de mantequilla y con polvo de pan encima y un poco de pimienta, se ponen capas alternadas de papas, cebollas y salmón, la última capa debe ser de papas. Se baten los huevos y se mezclan con la leche, cubriendo con esto el pudín, que se pone al horno a 350 grados por 30 a 40 minutos o hasta que las papas se ablanden. Al servirlo se le agrega mantequilla derretida.

Salmon Casserole
1/2 lb. smoked salmon, cut into small, thin slices
1 lb. potatoes, peeled and thinly sliced
3 eggs, beaten
2 c. milk
2 large onions, thinly sliced
Ground black pepper, to taste

Place salmon in the cold milk and soak for 4 hours. Butter a square casserole dish, sprinkle with some dry bread crumbs and sprinkle with some pepper. Place layers of potatoes, onions and salmon, repeating and ending with a layer of potatoes. Mix beaten eggs and the milk from soaking the salmon, pour into casserole. Bake at 350 degrees for 30 to 40 minutes or until potatoes are tender. May be served with melted butter.

Postre de Chocolate y Malvavisco/Chocolate-Marshmallow Desert

3 tazas corn flakes
¼ taza margarina, ablandada
2 cucharadas de azúcar
½ libra malvaviscos (marshmallows)
1 cucharadita de chocolate amargo (28 gramos)
1/2 taza de leche
1 taza crema espesa
1 cucharadita de vainilla

Desmorone los corn flakes hasta que quede cómo pan fino rallado. Mezcle con la mantequilla y el azúcar. Revuelva bien. Colóquelo presionando y cuidando de que quede bien parejito, en el fondo de un molde para pastel de 8” (20ctms). Si se desea cubrir la superficie, reserve 2 cucharadas de mezcla de corn flakes. Enfríe; mezcle los malvaviscos, el chocolate y la leche a baño María. Cueza revolviendo con frecuencia, hasta que los malvaviscos y el chocolate te derritan. Enfríe. Bata la crema hasta que se endurezca. Con un movimiento envolvente, agregue la vainilla y la crema batida a la mezcla de chocolate. Vierta en el molde de corn flakes. Cubra la superficie con las 2 cucharadas de mezcla que reservo. Refrigere hasta que este firme, alrededor de 3 horas. Rinde un pastel de 8 pulgadas.

Chocolate and Marshmallow Desert
3 c. corn flakes
¼ c. melted butter
2 T. sugar
8 oz. marshmallows
1 t. bitter chocolate
1/2 c. milk
1 c. heavy cream
1 t. vanilla

In a food processor, process corn flakes until fine crumbs. Mix with meted butter, reserving 2 T. for topping, if desired. Press into the bottom of an 8" round cake pan, as evenly as possible. Set aside to cool. On top of a double boiler, mix chocolate, marshmallows and milk until it is all melted and blended. Let it cool. In a mixer, beat heavy cream until firm. Fold into chocolate /marshmallow mixture along with the vanilla. Pour into prepared cake pan. Top with the 2 T. reserved corn flakes/butter mixture. Refrigerate for 3 hours or until firm.

Copas de Plátano/Banana Goblets

2 plátanos
50 gramos de azúcar
½ cucharadita de polvo de canela
4 cucharadas de crema
50 gramos de azúcar
50 gramos de coco rallado
30 gramos cerezas
1 limón

En copas anchas se ponen rebanadas de plátano y azúcar mezclada con la canela. Se les pone capita de crema batida con azúcar. Se espolvorean con el coco rallado, se adornan con una cereza y una tirita de limón. Se ponen en refrigerador una hora antes de servir.

Banana Goblets
2 bananas
4 T. sugar
½ t. cinnamon
4 T. heavy cream
4 T. sugar
4 T. shredded coconut
4 cherries from a jar
1 lemon

Divide into 4 wine goblets, banana slices and sprinkle with a mixture of sugar and cinnamon. Beat heavy cream and sugar, pour into goblets. Add layer of coconut and top with a cherry and a strip of lemon peel. Refrigerate 1 hour before serving.

Postre de Durazno/Peach Desert

3 litro de leche
½ kilo de azúcar
6 yemas
50 gramos de maicena
1 copita de Jerez dulce
1 rajita de canela
1 lata chica de mitades de duraznos

Se pone al fuego la mitad de la leche, el azúcar y la canela, cuando suelta el hervor se le añade el resto de le leche, en la que habrán desleído las yemas y la maicena, pasándola por la coladera. Se menea para que no se pegue y cuando se le ve el fondo al cazo, se le pone el vino y se revuelve bien. Se vacía en un platón, cuando empieza a enfriar se le van incrustando las mitades de duraznos.

Peach Desert
12 1/2 c. milk
1 lb. sugar
6 egg yolks
3 T. corn starch
1/2 c. sweet sherry
1 cinnamon stick
1 small can of peach halves
Dissolve half ot the milk with the cornstarch and the egg yolks and put through a strainer. Set aside.
In a pan place the other half of the milk, the sugar and cinnamon stick and as soon as it boils, add the rest of the milk/egg yolk/cornstarch mixture. Stir constantly and when you can see the bottom of the pan as you stir, add the sherry and mix well. Pour into a 8"x8" square pan and as it cools, place peach halves into the dish.

Ante Bueno/Elegant Bread Pudding

Se pone a hervir un litro de leche con 250 gramos de azúcar y 10 yemas, se esta moviendo hasta que espesa. Se rebana pan de huevo. Se colocan las rebanadas en un platón, se rocía con vino Jerez mezclado con jarabe de fresas, se cubre con la crema, se alisa y se mete al refrigerador. Cuando enfría, se espolvorea con azúcar y se dora poniéndolo en un comal con lumbre encima.

Elegant Bread Pudding
4 c. milk
1 c. sugar
10 egg yolks
1 loaf egg bread, sliced (similar to Hawaiian bread)
1/2 c. sweet sherry
1/2 c. strawberry syrup

Boil milk with sugar and egg yolks and stir continuously until it thickens, remove from heat. In a buttered casserole, layer the bread, mix the sherry and the strawberry syrup; pour over bread. Pour the milk-egg mixture and using a spatula, smooth out evenly. Place in the refrigerator. Once cold, sprinkle a layer of sugar and place under broiler until sugar is browned.

Postre Vienés/Viennese Dessert

8 rebanadas de pan de sándwich (en cuadritos)
2/3 taza de azúcar
1 taza leche evaporada
3 huevos separados
1 taza de nueces peladas y picadas
½ cáscara de limón rallada
1 lata de piña machucada (20 oz.)
½ cucharadita de canela en polvo

Se bate la leche con el pan. Aparte se baten bien las yemas con 1/3 taza de azúcar. Se le agrega la leche con pan y la cáscara de limón, solo revolviendo. En otro traste se baten las claras, hasta que quedan duras y le forman picos, después se agrega, poco a poco, el azúcar restante. Luego, se juntan las dos mezclas, se añade la piña escurrida, la canela y la nueces, y se revuelve. Se vierte la mezcla en un traste enmantequillado y se hornea a 400 grados por 40 minutos o hasta que se le mete un palillo y sale limpio. Ya frío, se parte en porciones y se sirve con crema batida con azúcar y se espolvorea con canela.

Venetian Dessert
8 slices of sandwich bread, cut into small cubes
2/3 c. sugar
1 c. evaporated milk
3 eggs, separated
½ t. grated lemon zest
1 can crushed pineapple (20 oz.), drained
½ t. cinnamon
1 c. walnuts, pealed and chopped

Beat bread with evaporated milk. In a seperate bowl, beat egg yolks with a 1/3 c. of the sugar. Add to the bread/milk mixture and add lemon zest, mix well. In a mixer, beat egg whites until soft peaks form. Slowly, beat in the rest of the sugar into egg whites. Fold both mixtures together, Combine the drained pineapple, cinnamon and the walnuts, into the mixture. Pour into a greased pan and bake at 400 degrees for 40 minutes or until a toothpick, inserted in the middle, comes out clean. Once cooled, cut into serving portions. Serve with sweeted whipped cream and sprinkle with cinnamon.

Postre Ofelia (de Soletas)/Ofelia's Dessert

350 gramos de azúcar
1 litro de leche
3 cucharadas de harina
1 huevo
4 yemas
1 raja de canela
18 soletas (Lady Fingers)
25 gramos de pasitas
¼ de litro de Jerez dulce

Las soletas se colocan en un platón de cristal y se mojan con la mitad del Jerez. Se bate ligeramente el huevo, las yemas y el azúcar, se agrega la harina, la leche y la canela y se pone al fuego moviendo constantemente. Cuando se le ve el fondo al cazo, se retira, se le pone el resto del jerez y se vacía sobre las soletas. Ya frío se adorna con las pasas.

Ofelia's Dessert
18 Lady Fingers
1 c. sweet sherry
1 egg
4 yolks
2 1/2 c. sugar
4 c. milk
3 T. flour
1 cinnamon stick
1/2 c. raisins

Arrange Lady Fingers in one layer on the bottom of a glass dish, pour half of the sweet sherry over them.
Beat lightly the egg, egg yolks and the sugar. Add milk, flour and cinnamon stick and heat stirring constantly. When you can see the bottom of the pan as you stir, remove from heat and add the rest of the sherry and pour over Lady Fingers. Refrigerate and sprinkle the raisins on top before serving.

Capirotada #2/Mexican Bread Pudding #2

Se parten unos picones por la mitad, se untan de mantequilla y se meten al horno a que doren. Se pone a hervir un litro de leche con 4 huevos batidos, 50 gramos de mantequilla, unas pasas, unas ciruelas de España, una raja de vainilla, unas nueces molidas y azúcar al gusto. Se saca de la lumbre cuando espesa. Fuera de la lumbre se le pone una copa de Jerez dulce. Se unta una cazuela de mantequilla y harina. Se pone una capa de pan y otra de la mezcla de leche, hasta terminar con leche. Arriba se le pone azúcar y polvo de pan. Se mete al horno a 350 grados por 45 minutos.

Mexican Bread Pudding #2
Slice some "picones" (found at Mexican bakeries)in half and butter halves; place in oven to toast.
Boil a mixture of : 4 cups of milk, 4 beaten eggs, 3 to 4 tablespoons butter, some raisins, some prunes, one vanilla bean, some chopped nuts and sugar to taste. Once it's thickened, remove from heat and add about 1/2 c. of sweet sherry. Butter a casserole and dust with some flour. Place a layer of the "picones " bread, than some milk mixture and repeat ending with the milk mixture. Top with some sugar and bread crumbs. Place in oven at 350 degrees for about 45 minutes.
