Churritos

50 gramos manteca (o ¼ taza de mantequilla)
1 taza de agua
¼ de cucharadita de sal
125 gramos (1 taza) harina cernida
3 huevos
Manteca para freír (o aceite).
½ taza de azúcar con 1 cucharadita de canela molida para revolcar.

Se calienta el azúcar, el agua y la sal a fuego alto. Cuando hierve, se baja el fuego y se añade toda la harina batiéndose bien. Cuando se forma una bola, se retira del fuego y se deja enfriar unos 20 minutos. Luego se agregan los huevos, uno por uno. Se pone la masa en dulla y se van sacando cortándose cada 10 centímetros aproximadamente, friéndose en manteca bien caliente, hasta que doren. Se escurren en papel absorbente. Se revuelcan en azúcar con canela.

¼ c. butter
1 c. hot water
¼ t. salt
1 c. flour, sifted
3 eggs
Oil for frying
For Dusting: Mix ½ c. sugar with 1 t. ground cinnamon.
Bring water to a boil with sugar and salt. Lower heat and quickly add flour and beat well. Once it forms into a ball, set aside and let cool for 20 minutes. Add eggs, one at a time and place in piping bag with star tip. Pour into hot oil in 4 inches strips. Fry until brown. Place on paper towels to drain some of the oil. While still warm, toss in sugar/cinnamon mixture.

Panecitos de Plátano Para Desayunar

Panecitos de Plátano para Desayunar
1 taza azúcar
½ taza mantequilla
2 plátanos grandes maduros
2 huevos
2 tazas harina
½ cucharadita sal
1 cucharadita polvo de hornear

Se bate el azúcar y la mantequilla, hasta que este terso, se baten los huevos y se mezclan con los plátanos molidos, luego se cierne la harina con la sal y el polvo de hornear. Se mezclan todos los ingredientes. Se vierte en moldecitos engrasados y enharinados. Se meten al horno a 325 grados por 30 a 40 minutos.

Small Banana Bread Loafs for Breakfast
1 c. sugar
1/2 c. butter
2 large ripe bananas
2 eggs
2 c. flour
1/4 t. salt
1 t. baking powder

Beat butter and sugar until smooth. Beat eggs and bananas together. In a bowl, sift flour , salt and baking powder. Mix all the ingredients together. Pour into in small, greased and floured loaf pans. Bake at 325 degrees for 30 to 40 minutes.









































Party Sandwhich Stack

This is another of my aunt's recipe. Tia Chata, as we called her, a term of endearment, was know for her delicious cooking. This is one of her more elegant recipes, made for special occasions.
This is my version, as I remember it.

Mix the following three different group of ingredients to make a smooth paste, separately.

Paste #1
One boiled or baked, chicken breast
1/2 c. chopped celery
12 pimento-stuffed olives
1 Pimento pepper, from a jar
1/2 c. sour cream
Place all ingredients in food processor and process to make a smooth paste.

Paste #2
1/2 lb. cooked ham
3 Pimentos peppers, from a jar
4 T. mayonnaise
2 sweet pickles
Place ingredients in food processor and process to make a smooth paste.

Paste #3
1 can (6.75 oz.) Deviled Ham
2 tsp. prepared mustard
1 T butter, melted
1/4 c. sour cream
1/2 T. chopped onion
Mix all ingredients to make a paste.

1 loaf of sliced white bread, crusts trimmed off.

Assemble sandwich: Place 4 slices of bread on a platter, forming a square.
Spread half of the #1 paste, place another layer of 4 slices of bread and spread half of the #2 paste, then repeat with spread #3. Repeat layers one more time, ending with bread on top. Frost.

Frosting for Party Sandwich:
12 oz. Cream Cheese at room temperature
1/2 c. sour cream
Mix, in electric mixer, until smooth and frost cake. Can decorate top of "cake" with slices
of pimento-stuffed olives and some of the pimentos cut length-wise strips, to form a flower, like a poinsettia for Christmas.
