Se cortan tortillas frías en tiritas y se fríen a que queden doradas. Se fríe tomate cocido, cebolla molida y un diente de ajo; se le agrega caldo y ahí se vacía la tortilla y una rama de yerbabuena, se deja cocer hasta que la tortilla esta suave y se consume el caldo, al último se le pone queso rallado.
Tortilla Soup (Dry)
Cut 10 tortillas into 1/2-inch strips and fry in hot oil until golden brown. Drain and set aside. Boil one large tomato and puree in a blender, with one small onion (rough-chopped) and a garlic clove. In the same pan, where tortillas were fried, fry tomato sauce for a couple of minutes. Add 2 cups chicken stock, a sprig of mint and the tortillas strips. Let it simmer until tortillas are soft and stock has evaporated. Sprinkle with shredded Jack cheese.
