About Lupita....
This is my Mother Guadalupe, "Lupita", born in Guadalajara, Mexico, on 12-12-12, and this is the reason why she got her name. On this day "La Virgen de Guadalupe" (Our Lady of Guadalupe) is celebrated in Mexico. My mother was a hard working woman, very active and very positive. She was always loved by everyone and everyone gravitated towards her. She was always happy and friendly. Her cooking was so good that relatives and friends would visit, uninvited, on Saturdays and Sundays, coming from far, just to enjoy some of her delicious dishes. Some of her recipes were written as far back as 1929, when she was only 16 years of age and "molcajetes" were used instead of a blender (in her recipes: " ....se muelen" it means that this was done on a "molcajete"). In some of the recipes, some of the techniques can be modified by using a food processor or a blender. Some of the ingredients can also be simplified by substituting with store-bought ingredients, such as a can of tomatoes or tomatillos or even a can of green chiles. But if you can take time to roast the tomatoes, tomatillos, chiles, garlic or onions, the extra step does give it a better flavor. You can do this on top of a stove burner, or on a "comal" or a griddle or even in a broiler. I hope you take the time to make some of these recipes so you, too, can enjoy some of her delicious cooking.
